- In the same skillet, sauté garlic and asparagus for about 5 minutes.

- Simmer the sauce for a few minutes until it begins to thicken slightly.
- Return the cooked pasta to the skillet and reduce heat to low.

- Slice the chicken and fold it into the pasta mixture.
- Serve hot, garnished with additional herbs and a squeeze of fresh lemon juice.

Pro Tips
This recipe is my go-to for a quick dinner fix. For the best results, don't rush the sauce-simmering step. Allowing the coconut milk to reduce slightly creates a thicker, more luxurious sauce that clings beautifully to the pasta. Also, be sure to season at every step—salt the pasta water, season the chicken before cooking, and taste the final dish before serving to adjust seasonings as needed.
Storage and Reheating
- Refrigerator: Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors often deepen overnight, making this dish even more delicious the next day.
- Freezing: While you can freeze this dish, the texture of the sauce may change slightly upon thawing. Freeze in individual portions for up to 2 months for quick meals.
- Reheating: Gently reheat on the stovetop with a splash of chicken broth or water to loosen the sauce. Alternatively, microwave on medium power, stirring halfway through to ensure even heating. View complete guide to storing and reheating chicken dishes.
Additions & Substitutions
Additions:
- Add red pepper flakes for a spicy kick that complements the creamy sauce.
- Toss in some sun-dried tomatoes for a sweet-tangy flavor boost.
- Include spinach or kale for extra greens—just stir them in at the end until wilted.
- Top with dairy-free cheese alternatives for an extra layer of flavor.
Substitutions:
- Swap chicken for shrimp or white beans for a different protein option.
- Replace asparagus with broccoli, peas, or zucchini based on seasonal availability.
- Use almond milk or oat milk instead of coconut milk for a different flavor profile (though the sauce won't be quite as creamy).
- Substitute lemon with lime for a different citrus note.

So, I felt like the instructions were missing at the end. I improvised and added the herbs towards the end and then just put everything together before serving. My coconut milk didnt thicken so I ended up having to make a rue to get it thicker. Taste/Flavor was good. I did end up adding some cajun and garlic powder to get a more intense flavor since the lemon was pretty subtle and somewhat bland. Otherwise - the recipe is a good one and we likely will make this again (with the substitutes mentioned).
